Description

A flavour-packed, comforting casserole that brings all the best parts of tacos—seasoned beef, beans, corn, salsa, and cheese—into one warm, melty bake that’s perfect for weeknight dinners or feeding a crowd.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheddar or Mexican-blend cheese
  • 1 large yellow onion, diced
  • 12 garlic cloves, minced
  • Optional toppings: tortilla chips, sour cream, chopped cilantro, sliced avocado

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté diced onion and garlic until softened.
  3. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
  4. Stir in taco seasoning (with water as package directs), black beans, and corn. Mix well.
  5. Add salsa and combine.
  6. Transfer mixture to a greased 9×13-inch baking dish.
  7. Sprinkle half the cheese over the top, then layer the rest evenly.
  8. Bake for 15–20 minutes, until cheese is melted and bubbly.
  9. Let rest a few minutes, then add optional toppings and serve.

Notes

  • Substitute ground turkey, chicken, or plant-based meat for beef.
  • Add diced bell peppers or jalapeños for more flavour or heat.
  • Use crushed tortilla chips as a base layer for added crunch.
  • Top with lime juice, olives, tomatoes, or pickled jalapeños.
  • Cover loosely with foil if cheese browns too quickly while baking.
