A flavour-packed, comforting casserole that brings all the best parts of tacos—seasoned beef, beans, corn, salsa, and cheese—into one warm, melty bake that’s perfect for weeknight dinners or feeding a crowd.
Ingredients
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheddar or Mexican-blend cheese
- 1 large yellow onion, diced
- 1–2 garlic cloves, minced
- Optional toppings: tortilla chips, sour cream, chopped cilantro, sliced avocado
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, sauté diced onion and garlic until softened.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
- Stir in taco seasoning (with water as package directs), black beans, and corn. Mix well.
- Add salsa and combine.
- Transfer mixture to a greased 9×13-inch baking dish.
- Sprinkle half the cheese over the top, then layer the rest evenly.
- Bake for 15–20 minutes, until cheese is melted and bubbly.
- Let rest a few minutes, then add optional toppings and serve.
Notes
- Substitute ground turkey, chicken, or plant-based meat for beef.
- Add diced bell peppers or jalapeños for more flavour or heat.
- Use crushed tortilla chips as a base layer for added crunch.
- Top with lime juice, olives, tomatoes, or pickled jalapeños.
- Cover loosely with foil if cheese browns too quickly while baking.
