Description

A hearty and flavorful cheesy taco casserole made with seasoned meat, beans, vegetables, and a creamy baked topping, perfect for family meals or gatherings.


Ingredients

  • 1 pound ground beef (or ground chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 30 g)
  • 1 can diced tomatoes with green chilies (about 300 g), drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup baking mix (such as Bisquick or similar)
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup canned corn, drained
  • 1/2 cup black beans, rinsed and drained

Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking dish.
  2. Cook ground beef with chopped onion in a skillet until browned; add garlic and cook 1 minute more. Drain excess fat if needed.
  3. Stir in taco seasoning and drained tomatoes. Simmer for 5 minutes, then remove from heat.
  4. In a bowl, whisk baking mix, milk, eggs, salt, pepper, and paprika until smooth.
  5. Spread meat mixture evenly in the baking dish.
  6. Top with corn and black beans, then sprinkle cheddar and mozzarella cheese.
  7. Pour batter evenly over the top.
  8. Bake for 30–35 minutes until golden and set.
  9. Cool for 5–10 minutes before slicing and serving.
