Ingredients
- 1 pound ground beef (or ground chicken)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (about 30 g)
- 1 can diced tomatoes with green chilies (about 300 g), drained
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup baking mix (such as Bisquick or similar)
- 1/2 cup milk
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup canned corn, drained
- 1/2 cup black beans, rinsed and drained
Instructions
- Preheat oven to 180°C (350°F) and grease a baking dish.
- Cook ground beef with chopped onion in a skillet until browned; add garlic and cook 1 minute more. Drain excess fat if needed.
- Stir in taco seasoning and drained tomatoes. Simmer for 5 minutes, then remove from heat.
- In a bowl, whisk baking mix, milk, eggs, salt, pepper, and paprika until smooth.
- Spread meat mixture evenly in the baking dish.
- Top with corn and black beans, then sprinkle cheddar and mozzarella cheese.
- Pour batter evenly over the top.
- Bake for 30–35 minutes until golden and set.
- Cool for 5–10 minutes before slicing and serving.
Notes
- Swap beef with chicken or turkey for a lighter version.
- Use Greek yogurt instead of sour cream for a healthier option.
- Add jalapeños or chili flakes for extra heat.
- Do not overbake to keep the casserole moist.
