Description

These Cherry Mash Truffles are rich, fruity, and chocolatey treats with a creamy texture and a bright cherry flavor. Easy to make and perfect for gifting or indulging.


Ingredients

  • 8 oz semi-sweet or dark chocolate, chopped
  • 1 cup heavy cream
  • 1 cup cherry puree

Instructions

  1. Place the chopped chocolate in a heatproof bowl.
  2. Heat the heavy cream in a saucepan until hot but not boiling.
  3. Pour the hot cream over the chocolate and let it sit for 1 minute.
  4. Stir the mixture until smooth and glossy.
  5. Add the cherry puree and stir until fully combined.
  6. Cover the bowl and refrigerate the mixture for 2–3 hours until firm.
  7. Scoop out portions and roll into balls with your hands.
  8. Place truffles on a lined tray and chill again until firm.
  9. Serve chilled or slightly softened at room temperature.

Notes

  • For a different finish, roll truffles in cocoa powder, powdered sugar, or chopped nuts.
  • Add a splash of cherry extract for a stronger cherry flavor.
  • Use extra-dark chocolate for a more intense taste.
  • Can be made ahead and stored in the fridge for up to a week.
  • Frozen cherries can be used for puree if thawed and blended.
