Description

Chicken Fra Diavolo Pasta is a bold and spicy Italian-inspired dish made with tender chicken, fiery tomato sauce, garlic, herbs, and pasta. It’s hearty, comforting, and perfect for a quick weeknight dinner with a kick.


Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium onion, chopped
  • 6 cloves garlic, minced
  • 3/4 cup dry white wine
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon crushed red pepper flakes (or to taste)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 16 ounces pasta
  • 2 cups cooked chicken, shredded or chopped
  • 1 to 2 tablespoons fresh parsley, chopped
  • 1 handful fresh basil, chopped or torn
  • Black pepper, to taste
  • Freshly grated parmesan cheese, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook for 5–7 minutes until soft and golden.
  3. Stir in garlic and cook for about 1 minute, until fragrant.
  4. Increase heat slightly and add white wine. Simmer until reduced by half.
  5. Stir in crushed tomatoes, red pepper flakes, Italian seasoning, oregano, and salt. Bring to a simmer, then partially cover and cook for 10 minutes.
  6. Meanwhile, cook pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
  7. Add cooked chicken to the sauce and let it warm through for 2–3 minutes.
  8. Stir in fresh parsley and basil.
  9. Add cooked pasta to the sauce and toss to combine, adding reserved pasta water as needed to loosen the sauce.
  10. Adjust seasoning with black pepper and more salt if needed. Serve hot with grated parmesan on top.

  • Use shrimp instead of chicken for a seafood twist.
  • Add a splash of heavy cream at the end for a richer sauce.
  • Try penne, rigatoni, or shells as pasta alternatives.
  • Prepare sauce ahead and store separately from pasta for best texture.
