Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound boneless skinless chicken breast, diced
  • 4 cups chicken broth
  • 1 cup heavy cream or half‑and‑half
  • 1 pound potato gnocchi
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic and sauté until softened.
  2. Add diced chicken and cook until no longer pink on the outside.
  3. Pour in chicken broth and bring the mixture to a boil.
