Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 package (5.2 ounces) Boursin cheese with Garlic and Fine Herbs
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 teaspoon dried thyme or Italian seasoning
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper. Cook for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the pan.
- Add heavy cream and let it simmer for 2 minutes.
- Reduce heat and stir in Boursin cheese, breaking it up until smooth and creamy.
- Add dried thyme and adjust seasoning if needed.
- Return chicken to the skillet and let it simmer in the sauce for 3–5 minutes.
- Garnish with fresh parsley and serve warm.
Notes
- Use chicken thighs for extra juiciness.
- Substitute half the cream with milk for a lighter version.
- Add mushrooms or spinach for extra texture and flavor.
- Sprinkle red pepper flakes for a hint of heat.
- Reheat gently over low heat with a splash of cream or broth to prevent sauce separation.
