Description

A hearty one-pot chicken stew made with tender chicken thighs, garden vegetables, and a flavorful broth. This comforting dish is nutritious, easy to prepare, and perfect for family dinners or meal prep.


Ingredients

  • 1 kg chicken thighs, bone-in and skin removed
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 large potato, peeled and diced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and cut
  • 400 g canned diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken thighs and brown them on all sides for about 5–7 minutes. Remove the chicken and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic for about 3 minutes until softened and fragrant.
  3. Add the sliced carrots, chopped celery, diced potato, and chopped red bell pepper. Cook for about 5 minutes, stirring occasionally.
  4. Stir in the zucchini, green beans, diced tomatoes, chicken broth, dried thyme, paprika, and bay leaf.
  5. Return the chicken to the pot. Bring the stew to a boil, then reduce the heat and simmer covered for about 40 minutes until the chicken is cooked through and the vegetables are tender.
  6. Remove the bay leaf. Season with salt and black pepper to taste.
  7. Sprinkle with freshly chopped parsley before serving.

Notes

  • Chicken thighs remain juicy during long simmering and provide the best flavor.
  • You can substitute drumsticks or chicken breast if desired.
  • Add seasonal vegetables such as peas, corn, or pumpkin for variety.
  • For a thicker stew, mash a few potatoes into the broth or add a small cornstarch slurry.
