Description

This no-bake Chocolate Bark combines Medjool dates, creamy peanut butter, crunchy pretzels and pecans, and rich dark chocolate for a salty-sweet treat that’s easy to make and perfect for snacking or gifting.


Ingredients

  • 30 Medjool dates
  • 1 1/2 cups peanut butter, softened
  • 300 g dark chocolate
  • 1 tbsp coconut oil or shortening
  • 1/4 cup chopped pecans
  • 12 pretzels (half crushed, half whole)
  • 10 Ritz crackers, crushed
  • 1 tbsp sprinkles (optional)
  • Salt, to taste

Instructions

  1. Line a baking sheet with parchment paper. Arrange the dates in rows and press them flat with a glass or jar bottom.
  2. Warm peanut butter until soft and pour over the dates. Spread evenly.
  3. Sprinkle chopped pecans, crushed pretzels, whole pretzels, and crushed crackers evenly over the peanut butter layer.
  4. Melt dark chocolate with coconut oil in a microwave or double boiler until smooth.
  5. Pour melted chocolate over the entire sheet, spread evenly. Add a sprinkle of salt and optional sprinkles.
  6. Refrigerate for 1 hour, or until completely firm.
  7. Break into pieces and store in the fridge.
