Instructions
- Prepare the crumble topping by combining flour, oats, sugar, and salt. Cut in cold butter until coarse crumbs form. Chill in the fridge.
- Whisk flour, baking powder, cinnamon, and salt for the cake.
- Cream butter and sugar until light and fluffy, then beat in eggs one at a time.
- Stir in vanilla and milk, then gently fold in the dry ingredients.
- Pour batter into greased springform pan, layer apple slices evenly on top.
- Scatter chilled crumble topping over apples.
- Bake at 350°F (175°C) for about 60 minutes or until a toothpick comes out clean.
- While cake cools, whisk egg yolks and sugar; slowly whisk in warm milk.
- Cook custard over low heat, stirring constantly, until thick enough to coat the back of a spoon.
- Remove from heat, stir in vanilla. Serve custard warm alongside cake.
