Description

Classic Pico de Gallo is a fresh Mexican salsa made with ripe tomatoes, onions, chiles, cilantro, and lime. It’s quick to prepare, bursting with flavor, and perfect as a topping or dip for just about any dish.


Ingredients

  • 1 ½ pounds ripe tomatoes, diced into ¼–½ inch pieces (about 3 cups)
  • 1 teaspoon kosher salt (plus more to taste)
  • ½ large white onion, finely diced (about ¾ cup)
  • 12 serrano or jalapeño chiles, finely diced (seeds and membranes removed for less heat)
  • ½ cup fresh cilantro leaves, finely chopped
  • 1 tablespoon lime juice (from 1 lime)

Instructions

  1. Season diced tomatoes with 1 teaspoon kosher salt and place in a colander to drain for 20–30 minutes.
  2. Transfer tomatoes to a large bowl. Stir in diced onion, chopped chiles, cilantro, and lime juice.
  3. Taste and adjust salt if needed.
  4. Let the salsa sit for 30 minutes to allow flavors to develop.
  5. Serve immediately or refrigerate until ready to use.

Notes

  • Add diced mango, pineapple, or peaches for a fruity variation.
  • Use poblano peppers instead of serrano/jalapeño for a milder salsa.
  • Swap cilantro with parsley or mint if desired.
