Ingredients
- For the Salad:
- 1 1/2–2 pounds red potatoes
- 3–4 hard-boiled eggs, chopped
- 1/2 cup chopped celery
- 1/2 cup finely chopped onion
- For the Dressing:
- 2/3 cup mayonnaise
- 1 tablespoon milk
- 1 tablespoon yellow mustard
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For Garnish:
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Place red potatoes in a large pot and cover with cold water. Bring to a boil and cook for about 15 minutes until fork-tender. Drain and cool under cold water.
- Once cool, peel the potatoes (optional) and chop into bite-sized pieces.
- In a small bowl, whisk together mayonnaise, milk, mustard, sugar, salt, and pepper to make the dressing.
- In a large bowl, combine chopped potatoes, eggs, celery, and onion. Pour the dressing over and mix gently to coat.
- Chill in the refrigerator for at least 1 hour before serving.
- Garnish with chopped parsley just before serving.
