Instructions
- Preheat oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease. Prepare a clean kitchen towel with a dusting of powdered sugar.
- In a bowl, beat eggs and granulated sugar until thick and pale. Mix in pumpkin puree and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Fold dry ingredients into wet until just combined.
- Spread batter evenly in the pan. Bake 13–15 minutes, until cake springs back when touched.
- Immediately turn the hot cake onto the prepared towel, peel off parchment, and roll the cake with the towel from the short end. Let cool completely.
- To make the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy.
- Unroll cooled cake, spread filling evenly, and re-roll tightly. Wrap in plastic wrap and chill at least 1 hour before slicing.
