Description

Ingredients

  • 2 chicken breasts
  • 1/2 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tbsp hot sauce
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp olive oil
  • Optional: chili flakes or chopped parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F). Lightly grease a baking dish or line it with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, grated Parmesan, hot sauce, garlic powder, paprika, salt, and black pepper. Stir until smooth and well blended.
  3. Pat the chicken breasts dry with paper towels. If they are thick, pound them lightly for even cooking.
  4. Coat each chicken breast thoroughly with the cottage cheese mixture, making sure all sides are covered.
  5. Sprinkle the breadcrumbs evenly over the coated chicken and press gently so they adhere.
  6. Place the chicken in the prepared baking dish and drizzle olive oil over the top.
  7. Bake for 25 to 30 minutes, or until the chicken is cooked through, crispy on top, and reaches an internal temperature of 75°C (165°F).
  8. Remove from the oven and let rest for a few minutes.
  9. Garnish with chili flakes or chopped parsley if desired, then serve warm.

  • Use panko breadcrumbs for extra crunch.
  • Reduce the hot sauce for a milder version.
  • Full-fat cottage cheese gives a richer flavor, while low-fat works for a lighter dish.
  • Boneless chicken thighs can be used instead of chicken breasts.
  • For a low-carb option, omit the breadcrumbs and use only the Parmesan coating.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
