Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1/2 cup onion, finely diced
- 2 cloves garlic, minced
- 16 oz processed cheese, cubed
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until soft and translucent.
- Add ground beef and cook until browned, breaking it apart with a spatula. Stir in garlic, chili powder, cumin, salt, and black pepper.
- Reduce heat to low. Add cubed processed cheese, shredded cheddar, and milk. Stir constantly until cheese is fully melted and mixture is smooth.
- Stir in the drained diced tomatoes with green chilies. Let the queso simmer for a few minutes until thick and creamy.
- Serve warm with tortilla chips, crackers, or as a topping for nachos or fries.
