Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 medium carrots, diced
  • 1 packet ranch seasoning mix
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a large pot, sauté diced onion, garlic, celery, and carrots in a small splash of chicken broth over medium heat until softened and fragrant.
  2. Add chicken breasts and remaining chicken broth. Bring to a simmer and cook for about 20 minutes, or until the chicken is cooked through.
  3. Remove the chicken, shred it using forks, and return it to the pot.
  4. Stir in cream cheese, ranch seasoning, and shredded cheddar cheese. Continue stirring until the soup is smooth and creamy.
  5. Season with salt and pepper to taste, then let simmer for a few more minutes.
