Ingredients
- 1½ pounds chicken tenders
- 1 cup plain Greek yogurt or mayonnaise
- 1 packet (1 ounce) ranch seasoning mix
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ½ cup crushed Ritz crackers or panko breadcrumbs
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ teaspoon black pepper
- Olive oil or cooking spray
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a bowl, mix Greek yogurt (or mayonnaise) with ranch seasoning until smooth.
- In another bowl, combine cheddar cheese, Parmesan, crushed crackers, garlic powder, paprika, and black pepper.
- Dip each chicken tender into the yogurt mixture, coating well, then press into the cheesy cracker mixture to coat thoroughly.
- Place coated tenders on the prepared baking sheet and lightly spray the tops with cooking spray.
- Bake for 25 to 30 minutes, flipping halfway through, until golden and cooked through (internal temp should reach 165°F).
- Serve hot with your favorite dipping sauces.
