Ingredients
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, cream cheese, and sugar until light and smooth.
- Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually stir dry ingredients into the wet mixture until a soft dough forms.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them slightly apart.
- Bake for 10–12 minutes, or until edges are set and tops are still pale.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake—cookies should remain pale and soft.
- Optional: roll dough balls in sugar before baking for a crackled finish.
- Add lemon zest or almond extract for a flavor twist.
- Drizzle with glaze or top with sprinkles for a festive touch.
- Microwave a cookie for 10 seconds to bring back fresh-baked softness.
