Description

This creamy avocado pasta recipe blends ripe avocados, garlic, lemon juice, and olive oil into a silky, green sauce that coats pasta beautifully. Light, tangy, and satisfying, it’s a quick and healthy dish ready in just 20 minutes.


Ingredients

  • 8 oz pasta (spaghetti, penne, or any kind)
  • 2 ripe avocados, halved and pitted
  • 2 cloves garlic, peeled
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • Salt, to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a food processor or blender, combine avocado flesh, garlic, lemon juice, olive oil, and salt. Blend until smooth, adding a bit of pasta water to loosen the sauce as needed.
  3. Return pasta to the pot. Add avocado sauce and toss over low heat until well coated.
  4. Stir in Parmesan cheese if using. Adjust seasoning and serve immediately with more Parmesan or fresh herbs if desired.

  • Use fresh lemon juice to preserve the vibrant green color of the sauce.
