Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 8 ounces Boursin cheese (garlic and herb flavor)
- 2 cups fresh spinach, roughly chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt, to taste

Instructions
- Prepare ingredients by chopping spinach and mincing garlic.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook 6–7 minutes per side until golden and cooked through. Remove and set aside.
