Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 8 ounces Boursin cheese (garlic and herb flavor)
  • 2 cups fresh spinach, roughly chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare ingredients by chopping spinach and mincing garlic.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook 6–7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic for about 1 minute until fragrant.

  5. Stir in orzo and cook uncovered for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
  6. Reduce heat to low and stir in Boursin cheese until melted and creamy.
  7. Fold in spinach until wilted.
  8. Slice chicken and return to skillet. Stir to combine and serve warm.
