This Creamy Burrito Casserole layers seasoned ground beef, tortillas, refried beans, and a rich sour cream–soup sauce, all topped with melted cheese. It’s a cozy, cheesy, one‑dish meal that brings burrito flavors to a simple weeknight casserole.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 small onion, diced
- 1 can cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar or Mexican blend cheese
- 1 can refried beans
- 4–5 flour tortillas, cut into strips
- Salt and pepper, to taste
- Cooking spray or oil for greasing
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a casserole dish with cooking spray or oil.
- In a skillet over medium heat, cook ground beef and diced onion until browned and onion is soft. Drain excess grease.
- Stir taco seasoning into the beef mixture according to packet instructions.
- In a bowl, mix cream of chicken soup and sour cream until smooth.
- Spread a thin layer of the creamy mixture on the bottom of the prepared casserole dish.
- Layer tortilla strips over the sauce, followed by seasoned beef, refried beans, and more of the creamy mixture. Repeat layers until ingredients are used, finishing with shredded cheese on top.
- Bake uncovered for about 30 minutes, until the cheese is melted and bubbly.
- Let rest for a few minutes before serving.
