Description

This Creamy Burrito Casserole layers seasoned ground beef, tortillas, refried beans, and a rich sour cream–soup sauce, all topped with melted cheese. It’s a cozy, cheesy, one‑dish meal that brings burrito flavors to a simple weeknight casserole.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 small onion, diced
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 can refried beans
  • 45 flour tortillas, cut into strips
  • Salt and pepper, to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a casserole dish with cooking spray or oil.
  2. In a skillet over medium heat, cook ground beef and diced onion until browned and onion is soft. Drain excess grease.
  3. Stir taco seasoning into the beef mixture according to packet instructions.
  4. In a bowl, mix cream of chicken soup and sour cream until smooth.
  5. Spread a thin layer of the creamy mixture on the bottom of the prepared casserole dish.
  6. Layer tortilla strips over the sauce, followed by seasoned beef, refried beans, and more of the creamy mixture. Repeat layers until ingredients are used, finishing with shredded cheese on top.
  7. Bake uncovered for about 30 minutes, until the cheese is melted and bubbly.
  8. Let rest for a few minutes before serving.
