Ingredients
- 2 cups cooked chicken breast, finely shredded
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup grated cheese (mozzarella or cheddar)
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup flour (for coating)
- Vegetable oil (for frying)
Instructions
- Melt butter in a saucepan over medium heat, then add flour and stir for 1–2 minutes to form a smooth paste.
- Gradually whisk in milk, cooking until thick and smooth.
- Add salt, pepper, and nutmeg, then stir in shredded chicken and cheese until combined and melted.
- Remove from heat and allow mixture to cool completely.
- Refrigerate for at least 1 hour until firm.
- Shape mixture into small logs or oval croquettes.
- Coat each croquette in flour, dip in beaten eggs, then coat with breadcrumbs.
- Heat oil in a deep pan over medium heat.
- Fry croquettes in batches for 3–4 minutes until golden brown and crispy.
- Remove and drain on paper towels before serving.
Notes
- Ensure mixture is fully cooled before shaping.
- Chill longer if mixture is too soft.
- Double-coat with breadcrumbs for extra crispiness.
- Can be baked or air-fried as a lighter option.
