Ingredients
2 Tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1/2 tsp dried thyme
1/2 tsp dried oregano
1 tsp salt
1/2 tsp ground black pepper
4 cups chicken broth
2 cups cooked chicken, shredded
1 cup heavy cream
1 lb potato gnocchi
2 cups fresh spinach
1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, about 3 minutes.
- Add garlic, carrots, and celery; cook for 5 minutes, stirring occasionally.
- Stir in dried thyme, oregano, salt, and pepper.
- Pour in chicken broth and bring to a gentle boil.
- Add shredded chicken and gnocchi; simmer for 5–7 minutes until gnocchi are tender.
- Reduce heat, stir in heavy cream and spinach; cook for 2–3 minutes until spinach wilts.
- Remove from heat, stir in Parmesan cheese until melted.
- Taste and adjust seasoning as needed before serving.
