Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 16 ounces fresh or frozen gnocchi
  • 8 ounces cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1/2 cup smoked turkey bits (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon cooking oil

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add chicken pieces and cook for 5–7 minutes until golden brown and fully cooked.
  2. Reduce heat to medium and add cream cheese and chicken broth. Stir until the cream cheese melts into a smooth sauce.
  3. Add gnocchi and spinach, stir gently, then cover and simmer for 5–7 minutes until gnocchi is tender and spinach is wilted.
  4. Remove the lid and stir in shredded cheddar cheese and smoked turkey bits if using.
  5. Continue stirring until cheese is melted and the sauce becomes creamy.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve warm.
