Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 16 ounces fresh or frozen gnocchi
- 8 ounces cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- 1/2 cup smoked turkey bits (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon cooking oil
Instructions
- Heat oil in a large skillet over medium-high heat. Add chicken pieces and cook for 5–7 minutes until golden brown and fully cooked.
- Reduce heat to medium and add cream cheese and chicken broth. Stir until the cream cheese melts into a smooth sauce.
- Add gnocchi and spinach, stir gently, then cover and simmer for 5–7 minutes until gnocchi is tender and spinach is wilted.
- Remove the lid and stir in shredded cheddar cheese and smoked turkey bits if using.
- Continue stirring until cheese is melted and the sauce becomes creamy.
- Taste and adjust seasoning with salt and pepper.
- Serve warm.
