Ingredients
- 6 cups chicken broth
- 1 cup dry orzo pasta
- 2 tablespoons olive oil or butter
- 1 pound boneless, skinless chicken breast, cut into small pieces
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 large lemon, zested and juiced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- Chopped fresh parsley, optional for garnish
Instructions
- Heat olive oil or butter in a large pot over medium heat.
- Add chicken pieces and cook until lightly golden and fully cooked. Remove and set aside.
- In the same pot, add chopped onion and cook until soft and translucent.
- Stir in garlic and cook briefly until fragrant.
- Pour in chicken broth and bring to a gentle boil.
- Add orzo and cook according to package directions, stirring occasionally.
- Return cooked chicken to the pot and reduce heat.
- Slowly stir in heavy cream, lemon zest, and lemon juice.
- Season with salt, black pepper, and dried oregano.
- Simmer a few minutes until creamy and well combined, then adjust seasoning and serve.
