Ingredients
- 3 cups cooked chicken breast, shredded or cut into 1/2-inch cubes
- 10.5 oz condensed chicken soup
- 7 cups chicken stock
- 1 cup milk
- 1 cup cream cheese, softened
- 1.5 cups shredded cheddar cheese
- 8 oz angel hair pasta, broken into 2-inch pieces
- 12 slices smoked turkey strips, cooked until crispy and crumbled
- 2 carrots, peeled and sliced into 1/4-inch rounds
- 1/2 cup celery, diced
- 1 oz ranch seasoning mix
- 1/2 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
Instructions
- Cook the smoked turkey strips in a skillet over medium heat for 6–8 minutes until crispy. Transfer to a paper towel-lined plate and crumble once cooled.
- Peel and slice the carrots into thin rounds and dice the celery.
- In a large soup pot, combine chicken stock, condensed chicken soup, milk, and softened cream cheese.
- Whisk over medium heat for 3–4 minutes until the cream cheese melts and the mixture becomes smooth.
- Add the diced celery, sliced carrots, cooked chicken, crumbled turkey strips, ranch seasoning, and garlic powder.
- Bring to a gentle boil, then reduce heat to medium-low.
- Simmer the soup for 20–25 minutes, stirring occasionally, until vegetables soften.
- Add the broken angel hair pasta and stir well to prevent sticking.
- Cook for 4–5 minutes until the pasta begins to soften.
- Gradually stir in the shredded cheddar cheese until fully melted.
- Continue cooking for another 2–3 minutes until noodles are tender.
- Taste and adjust seasoning with salt and black pepper before serving.
Notes
- Rotisserie chicken can be used instead of cooking fresh chicken.
- Freshly shredded cheese melts smoother than packaged shredded cheese.
- If the soup thickens during storage, add a splash of chicken stock or milk when reheating.
- Egg noodles, rotini, or shell pasta can replace angel hair.
