Description

Golden, crispy egg roll wrappers filled with tender shrimp, melted mozzarella, and creamy cheese for a rich and savory appetizer. These creamy shrimp cheese rolls are crunchy on the outside and irresistibly cheesy on the inside.


Ingredients

  • 8 egg roll wrappers
  • 16 medium shrimp (about 250 g), peeled and deveined
  • 1 cup shredded mozzarella cheese (120 g)
  • 1/2 cup cream cheese, softened (120 g)
  • 1 tablespoon finely chopped green onions
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon cornstarch
  • 1 tablespoon water (for sealing)
  • 23 cups vegetable oil (for frying)

Instructions

  1. Pat shrimp dry and chop into small bite-sized pieces.
  2. In a bowl, combine chopped shrimp, mozzarella, cream cheese, green onions, garlic, salt, pepper, and paprika. Mix well.
  3. Place one egg roll wrapper in a diamond shape. Spoon about 2 tablespoons of filling in the center.
  4. Fold bottom corner over filling, fold in sides, and roll tightly. Seal edges with cornstarch-water mixture.
  5. Repeat with remaining wrappers and filling.
  6. Heat oil to 175°C (350°F) in a deep skillet.
  7. Fry 3–4 rolls at a time for 3–4 minutes, turning occasionally, until golden brown.
  8. Drain on paper towels or a wire rack and serve warm.

Notes

  • Do not overfill to prevent bursting during frying.
  • Ensure oil maintains steady temperature for even crisping.
  • For baking, brush with oil and bake at 200°C (400°F) for 15–18 minutes.
  • Air fry at 190°C (375°F) for 8–10 minutes, flipping halfway.
  • Freeze uncooked rolls and fry directly from frozen, adding 1–2 minutes.
