Ingredients
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 10 oz mushrooms, sliced
- 10 oz fresh spinach leaves
- 2 cups ricotta cheese
- 9 lasagna noodles (regular or oven-ready)
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onion until soft and translucent.
- Add garlic and cook for 1 minute. Stir in mushrooms and cook until browned and moisture evaporates.
- Add spinach and cook until wilted, about 2-3 minutes. Remove from heat.
- Let the mixture cool slightly, then mix in ricotta cheese. Season with salt and pepper.
- In a baking dish, spread a thin layer of the spinach-mushroom mixture. Layer with lasagna noodles, then more filling. Repeat layers, ending with filling on top.
- Top with mozzarella and Parmesan cheeses.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 10-15 minutes until cheese is golden and bubbly.
- Let rest for 10 minutes before serving.
Notes
- Add red pepper flakes for heat.
- Mix mozzarella into the ricotta for extra cheesiness.
- Swap ricotta with cottage cheese if preferred.
- Use gluten-free noodles for a gluten-free version.
