Ingredients
- 4 russet potatoes, cooked and mashed
- 2 green onions, finely chopped
- 1/4 cup sour cream
- Salt, to taste
- Pepper, to taste
- 8 oz cheddar cheese block, cut into strips
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1/2 cup cornstarch
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
Instructions
- Mash cooked potatoes until mostly smooth, then mix in green onions, sour cream, salt, and pepper.
- Flatten a spoonful of the potato mixture in your hand, place a strip of cheese in the center, and wrap the potato around the cheese to form a stick or oval. Repeat with remaining mixture.
- Set up three bowls for coating: flour, beaten egg, and a mix of cornstarch and panko breadcrumbs.
- Coat each potato stick in flour, dip in egg, then roll in the breadcrumb mixture.
- Heat oil in a deep pot to 350°F (180°C). Fry sticks in small batches for about 3 minutes or until golden brown and crispy.
- Remove and drain on paper towels. Serve warm.

- Use mozzarella or pepper jack for different flavors or textures.
- Add spices like paprika or garlic powder to the potato mixture for extra flavor.
- Bake instead of fry at 425°F (220°C), flipping halfway through, for a lighter option.
