Description

Crispy Cheese-Stuffed Potato Sticks are a comforting, cheesy snack made with creamy mashed potatoes wrapped around melty cheddar cheese, coated in a crunchy breadcrumb crust and fried until golden brown.


Ingredients

  • 4 russet potatoes, cooked and mashed
  • 2 green onions, finely chopped
  • 1/4 cup sour cream
  • Salt, to taste
  • Pepper, to taste
  • 8 oz cheddar cheese block, cut into strips
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup cornstarch
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. Mash cooked potatoes until mostly smooth, then mix in green onions, sour cream, salt, and pepper.
  2. Flatten a spoonful of the potato mixture in your hand, place a strip of cheese in the center, and wrap the potato around the cheese to form a stick or oval. Repeat with remaining mixture.
  3. Set up three bowls for coating: flour, beaten egg, and a mix of cornstarch and panko breadcrumbs.
  4. Coat each potato stick in flour, dip in egg, then roll in the breadcrumb mixture.
  5. Heat oil in a deep pot to 350°F (180°C). Fry sticks in small batches for about 3 minutes or until golden brown and crispy.
  6. Remove and drain on paper towels. Serve warm.

  • Add spices like paprika or garlic powder to the potato mixture for extra flavor.
