Ingredients
- 3–4 lb beef chuck roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1/2 cup balsamic vinegar
- 1/3 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 medium onion, sliced
Instructions
- Season the beef chuck roast on all sides with salt and black pepper.
- Place sliced onion in the bottom of the crockpot and lay the roast on top.
- In a bowl, whisk together beef broth, balsamic vinegar, honey, soy sauce, and minced garlic.
- Pour the sauce mixture over the roast, ensuring it’s evenly coated.
- Cover and cook on low for 8 hours or until the beef is fork-tender.
- Before serving, spoon sauce over the roast or shred the meat and mix with the juices.

- Add carrots or potatoes to the crockpot for a one-pot meal.
- Optional: sear roast before placing in crockpot for more flavor.
- Reduce sauce on the stove for a thicker glaze if desired.
