Description

This Crockpot Honey Balsamic Beef Chuck Roast is a slow-cooked comfort meal with tender beef simmered in a sweet, tangy, and savory sauce. It’s perfect for busy days, gatherings, or prepping ahead for flavorful leftovers.

Ingredients

  • 34 lb beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 medium onion, sliced

Instructions

  1. Season the beef chuck roast on all sides with salt and black pepper.
  2. Place sliced onion in the bottom of the crockpot and lay the roast on top.
  3. In a bowl, whisk together beef broth, balsamic vinegar, honey, soy sauce, and minced garlic.
  4. Pour the sauce mixture over the roast, ensuring it’s evenly coated.
  5. Cover and cook on low for 8 hours or until the beef is fork-tender.
  6. Before serving, spoon sauce over the roast or shred the meat and mix with the juices.

Notes

  • Add carrots or potatoes to the crockpot for a one-pot meal.
  • Optional: sear roast before placing in crockpot for more flavor.
  • Reduce sauce on the stove for a thicker glaze if desired.
  • Tastes even better the next day as leftovers.
