Description

A healthy, crustless quiche made with creamy cottage cheese, fresh spinach, and sautéed vegetables, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 1 tbsp oil
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and grease a 9-inch baking dish.
  2. Heat oil in a skillet over medium heat. Sauté onion and bell pepper for 4–5 minutes.
  3. Add spinach and cook until wilted, about 2–3 minutes. Remove from heat and cool slightly.
  4. In a bowl, whisk eggs, cottage cheese, milk, salt, pepper, and nutmeg until smooth.
  5. Stir in the sautéed vegetables and optional cheddar cheese.
  6. Pour mixture into the prepared dish and spread evenly.
  7. Bake for 30–35 minutes until set and lightly golden.
  8. Cool for 5–10 minutes before slicing and serving.
