Description
A healthy, crustless quiche made with creamy cottage cheese, fresh spinach, and sautéed vegetables, perfect for breakfast, brunch, or a light dinner.
Ingredients
- 1 tbsp oil
- 1 small onion, diced
- 1/2 bell pepper, diced
- 2 cups fresh baby spinach, chopped
- 1 1/2 cups cottage cheese
- 4 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 180°C (350°F) and grease a 9-inch baking dish.
- Heat oil in a skillet over medium heat. Sauté onion and bell pepper for 4–5 minutes.
- Add spinach and cook until wilted, about 2–3 minutes. Remove from heat and cool slightly.
- In a bowl, whisk eggs, cottage cheese, milk, salt, pepper, and nutmeg until smooth.
- Stir in the sautéed vegetables and optional cheddar cheese.
- Pour mixture into the prepared dish and spread evenly.
- Bake for 30–35 minutes until set and lightly golden.
- Cool for 5–10 minutes before slicing and serving.

- Use full-fat cottage cheese for a richer texture.
- Drain frozen spinach well before using.
- Sautéing vegetables enhances flavor and removes excess moisture.
- Customize with mushrooms, herbs, or different cheeses.
