Description

This cucumber lime mint agua fresca is a refreshing and hydrating summer drink made with crisp cucumber, zesty lime juice, fresh mint, and a touch of sugar. It’s light, vibrant, and ready in just 15 minutes.


Ingredients

1 pound cucumbers (about 2 medium), coarsely chopped with peel on

1/2 cup fresh lime juice (from about 510 limes)

1 1/4 cups packed fresh mint leaves, woody stems removed

1/2 cup sugar

Approximately 1 1/4 cups water


Instructions

  1. Add cucumber, lime juice, mint leaves, sugar, and water to a blender. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a bowl, pressing with a spoon to extract juice.
  3. Fill a large pitcher halfway with ice and pour the strained juice over the ice.
  4. Stir well and serve cold, garnished with mint sprigs and lime slices if desired.

Notes

  • Swap still water with sparkling for a fizzy version.
  • Use basil or lemon balm instead of mint for a different herbal note.
  • Substitute sugar with honey, agave, or another sweetener of choice.
