Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup Alfredo sauce
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 2 eggs, beaten
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions
- Season shrimp with salt and pepper and mix with Alfredo sauce in a bowl.
- Lay a tortilla flat and spoon shrimp mixture into the center. Sprinkle mozzarella on top.
- Fold sides in and roll up tightly to form burritos.
- Dip each burrito in beaten egg, then coat in breadcrumbs.
- Heat oil in a deep skillet to 350°F (175°C). Fry burritos until golden brown, about 3–4 minutes per side.
- Remove and drain on paper towels. Slice into bite-sized pieces if desired.
- Serve warm with extra Alfredo sauce or preferred dipping sauce.
Notes
- For extra flavor, add red pepper flakes or sautéed mushrooms/spinach to the filling.
- Swap shrimp for chicken or crab if desired.
- Bake at 400°F (200°C) for 15–20 minutes for a lighter version.
- Air-fry at 375°F for 10–12 minutes, flipping halfway through.
- Reheat leftovers in oven at 375°F to maintain crispiness.
