Description

Ingredients

4 boneless, skinless chicken breasts (68 oz each)

Filling:

8 oz cream cheese

2 cups cooked and chopped spinach (fresh or frozen)

2 cloves garlic, minced

1 cup shredded cheese (mozzarella, cheddar, or feta)

1 tablespoon fresh herbs, chopped (such as basil, parsley, or thyme)

Salt and pepper, to taste

Seasoning for Chicken:

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the filling by combining the cream cheese, cooked spinach, minced garlic, shredded cheese, chopped herbs, salt, and pepper in a bowl. Stir until well mixed.
  3. Place the chicken breasts on a cutting board. Use a sharp knife to carefully create a pocket in each chicken breast by slicing horizontally, ensuring not to cut all the way through.
  4. Stuff each chicken breast with the filling mixture, securing the opening with toothpicks if needed.
  5. Brush each stuffed chicken breast with olive oil, then sprinkle with paprika and garlic powder on both sides.
  6. Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side, until golden brown.
  7. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
  8. Remove the toothpicks from the chicken and serve hot.
