Ingredients
4 boneless, skinless chicken breasts (6–8 oz each)
Filling:
8 oz cream cheese
2 cups cooked and chopped spinach (fresh or frozen)
2 cloves garlic, minced
1 cup shredded cheese (mozzarella, cheddar, or feta)
1 tablespoon fresh herbs, chopped (such as basil, parsley, or thyme)
Salt and pepper, to taste
Seasoning for Chicken:
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling by combining the cream cheese, cooked spinach, minced garlic, shredded cheese, chopped herbs, salt, and pepper in a bowl. Stir until well mixed.
- Place the chicken breasts on a cutting board. Use a sharp knife to carefully create a pocket in each chicken breast by slicing horizontally, ensuring not to cut all the way through.
- Stuff each chicken breast with the filling mixture, securing the opening with toothpicks if needed.
- Brush each stuffed chicken breast with olive oil, then sprinkle with paprika and garlic powder on both sides.
- Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side, until golden brown.
- Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
- Remove the toothpicks from the chicken and serve hot.
