Ingredients

  • 1 pie crust (store-bought or homemade)
  • 8 oz full-fat cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Gel food coloring (various colors)
  • Whipped cream (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C). Roll out pie crust into a 9-inch pie pan and crimp edges.
  2. Blind bake crust: line with parchment paper, add pie weights or dried beans, and bake 10–15 minutes until lightly golden. Remove weights and let cool.
  3. In a mixing bowl, beat cream cheese and sugar until smooth and fluffy.
  4. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  5. Divide filling into small bowls and add desired food coloring to each.
  6. Spoon colored fillings into crust in random dollops. Use a skewer or butter knife to swirl colors lightly.
