Ingredients
- 1 pie crust (store-bought or homemade)
- 8 oz full-fat cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Gel food coloring (various colors)
- Whipped cream (optional, for serving)
Instructions
- Preheat oven to 350°F (175°C). Roll out pie crust into a 9-inch pie pan and crimp edges.
- Blind bake crust: line with parchment paper, add pie weights or dried beans, and bake 10–15 minutes until lightly golden. Remove weights and let cool.
- In a mixing bowl, beat cream cheese and sugar until smooth and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla extract.
- Divide filling into small bowls and add desired food coloring to each.
- Spoon colored fillings into crust in random dollops. Use a skewer or butter knife to swirl colors lightly.
