Ingredients
- 16 oz rotini pasta
- 2 cups baby dill pickles, chopped
- 1 ½ cups cheddar cheese, cubed or shredded
- ½ cup sweet yellow onion, finely diced
- ½ cup green onion, sliced
- 4 tablespoons fresh dill, chopped
- ¾ cup mayonnaise
- ½ cup sour cream
- ⅓ cup dill pickle juice
- ½ teaspoon onion powder
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
- Cook rotini pasta in salted water until al dente. Drain and let cool completely.
- In a large bowl, whisk together mayonnaise, sour cream, dill pickle juice, onion powder, salt, and pepper until smooth.
- Add cooled pasta to the bowl with the dressing.
- Stir in chopped pickles, cheddar cheese, yellow onion, green onion, and fresh dill.
- Mix gently until everything is well combined.
- Cover and refrigerate for at least 1 hour before serving.
Notes
- Add more fresh dill for stronger herb flavor.
- Substitute cheddar with Colby Jack or mozzarella for variety.
- Mix in celery or extra green onion for added crunch.
- If salad thickens after chilling, stir in a spoonful of mayo or sour cream to loosen it.
