Ingredients
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 2 cups whole milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 9-inch pre-baked pie crust
Instructions
- Melt the butter in a saucepan over medium heat.
- Stir in the brown sugar, cornstarch, and salt until well combined and smooth.
- Gradually pour in the milk, whisking constantly to avoid lumps.
- Continue stirring as the mixture cooks and thickens, about 5–8 minutes.

- Pour the tempered egg yolk mixture back into the saucepan.
- Cook while stirring until the filling thickens to a creamy, pudding-like consistency.
- Remove from heat and stir in the vanilla extract.
- Pour the filling into the pre-baked pie crust and smooth the top.
- Cool the pie at room temperature, then refrigerate for at least 2 hours to fully set.
