Description

Doritos Taco Casserole is a hearty baked dish layered with seasoned ground beef, creamy taco filling, sweet corn, melted Mexican cheese, and crunchy tortilla chips for a comforting family-style dinner.


Ingredients

  • 2 cups nacho cheese tortilla chips, finely crushed
  • 1 cup nacho cheese tortilla chips, loosely crushed
  • 1 pound ground beef
  • 1/2 cup yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can Rotel tomatoes with green chilies (10 ounces), undrained
  • 1 cup sour cream
  • 1 cup frozen corn kernels
  • 3 cups Mexican blend shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat cook the ground beef and diced onion for 6 to 8 minutes until the beef is browned.
  3. Add the minced garlic and cook for about 30 seconds.
  4. Stir in the taco seasoning and the undrained Rotel tomatoes and simmer for 3 minutes.
  5. Add the sour cream and frozen corn and mix until evenly combined.
  6. Spread the finely crushed tortilla chips evenly across the bottom of the prepared baking dish.
  7. Pour the beef mixture over the chips and spread evenly.
  8. Sprinkle 2 cups of shredded Mexican cheese over the beef mixture.
  9. Add the loosely crushed tortilla chips on top.
  10. Finish with the remaining 1 cup of shredded cheese.
  11. Bake for 20 to 25 minutes until the cheese is melted and bubbly.
  12. Allow the casserole to rest for 5 minutes before serving.

Notes

  • Ground turkey or chicken can replace the beef for a lighter version.
  • Add black beans for extra protein and texture.
  • Include diced bell peppers or chopped tomatoes for additional vegetables.
  • For extra spice add chopped jalapeños or chili powder.
  • Top with avocado, cilantro, green onions, or extra sour cream before serving.
