Doritos Taco Casserole is a hearty baked dish layered with seasoned ground beef, creamy taco filling, sweet corn, melted Mexican cheese, and crunchy tortilla chips for a comforting family-style dinner.
Ingredients
- 2 cups nacho cheese tortilla chips, finely crushed
- 1 cup nacho cheese tortilla chips, loosely crushed
- 1 pound ground beef
- 1/2 cup yellow onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (about 1 ounce)
- 1 can Rotel tomatoes with green chilies (10 ounces), undrained
- 1 cup sour cream
- 1 cup frozen corn kernels
- 3 cups Mexican blend shredded cheese
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat cook the ground beef and diced onion for 6 to 8 minutes until the beef is browned.
- Add the minced garlic and cook for about 30 seconds.
- Stir in the taco seasoning and the undrained Rotel tomatoes and simmer for 3 minutes.
- Add the sour cream and frozen corn and mix until evenly combined.
- Spread the finely crushed tortilla chips evenly across the bottom of the prepared baking dish.
- Pour the beef mixture over the chips and spread evenly.
- Sprinkle 2 cups of shredded Mexican cheese over the beef mixture.
- Add the loosely crushed tortilla chips on top.
- Finish with the remaining 1 cup of shredded cheese.
- Bake for 20 to 25 minutes until the cheese is melted and bubbly.
- Allow the casserole to rest for 5 minutes before serving.
Notes
- Ground turkey or chicken can replace the beef for a lighter version.
- Add black beans for extra protein and texture.
- Include diced bell peppers or chopped tomatoes for additional vegetables.
- For extra spice add chopped jalapeños or chili powder.
- Top with avocado, cilantro, green onions, or extra sour cream before serving.
