Ingredients

Fresh apples (about 1 pound, thinly sliced; 3 large or 6 small)

Light brown sugar

All-purpose flour (plus extra for dusting)

Ground cinnamon

Ground nutmeg

Salt

Egg (whisked with a little water for egg wash)

Coarse sugar for sprinkling


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice apples into thin ¼-inch pieces; toss with brown sugar, flour, cinnamon, nutmeg, and a pinch of salt.
  3. Let pie dough rest at room temperature for 10 minutes, then roll out into a 12-inch circle on a lightly floured surface.
  4. Transfer dough onto a parchment-lined baking sheet; sprinkle a little flour in the center to prevent sogginess.
  5. Arrange apple slices neatly in the center, leaving a 2–3 inch border.
