Ingredients
- 2 flatbreads or naan
- 1 cup cooked shredded chicken
- ½ cup BBQ sauce, plus extra for drizzling (optional)
- 1 cup shredded mozzarella cheese
- ½ cup shredded sharp cheddar cheese
- ¼ cup thinly sliced red onion
- 2 tablespoons chopped fresh cilantro or parsley
- 1 tablespoon olive oil or garlic butter (optional)
- Optional toppings: pickled jalapeños, crispy fried onions
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, toss the shredded chicken with BBQ sauce until well coated.
- Place the flatbreads on the baking sheet and lightly brush with olive oil or garlic butter.
- Optionally, spread a thin layer of BBQ sauce directly on the flatbreads for extra flavor.
- Top each flatbread with half the mozzarella and cheddar cheese.
- Add BBQ chicken and red onion slices evenly over the cheese, then sprinkle with the remaining cheese.
- Bake for 10–12 minutes, until the cheese is melted and the edges are golden brown.
- Remove from oven, top with fresh cilantro or parsley, slice, and serve immediately.
Notes
- Use smoked gouda, pepper jack, or provolone for different cheese profiles.
- For a vegetarian version, use BBQ jackfruit or roasted mushrooms instead of chicken.
- Add vegetables like bell peppers or corn for more flavor and texture.
- Freeze baked flatbreads and reheat from frozen for a fast meal later.
