Ingredients
- 2 tablespoons vegetable oil
- 4 cups bok choy, chopped
- 8 ounces mushrooms (shiitake or button), sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (or vegetarian alternative)
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add mushrooms and cook for 3–4 minutes until softened.
- Stir in bell pepper and cook for another 2 minutes.
- Add bok choy and stir-fry for 2–3 minutes, until just wilted.
- In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch slurry.
- Pour the sauce into the pan and stir well to coat. Let simmer for 1 minute to thicken.
- Season with salt and pepper to taste. Serve warm.

- Use cremini mushrooms or even portobello for deeper flavor.
- Add chili garlic sauce or red pepper flakes for extra heat.
