Description

This Easy Bok Choy & Mushroom Stir-Fry is a fast, flavorful, and healthy dinner made in just 20 minutes. With crisp bok choy, tender mushrooms, and a savory garlic sauce, it’s a satisfying vegetarian meal or side dish that’s perfect for busy nights.


Ingredients

  • 2 tablespoons vegetable oil
  • 4 cups bok choy, chopped
  • 8 ounces mushrooms (shiitake or button), sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian alternative)
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add mushrooms and cook for 3–4 minutes until softened.
  4. Stir in bell pepper and cook for another 2 minutes.
  5. Add bok choy and stir-fry for 2–3 minutes, until just wilted.
  6. In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch slurry.
  7. Pour the sauce into the pan and stir well to coat. Let simmer for 1 minute to thicken.
  8. Season with salt and pepper to taste. Serve warm.

  • Use cremini mushrooms or even portobello for deeper flavor.
  • Add chili garlic sauce or red pepper flakes for extra heat.
