Description

These Easy Ground Beef Enchiladas are hearty, cheesy, and full of flavor. Juicy seasoned beef is wrapped in tortillas, smothered in enchilada sauce, and topped with melted cheese for a cozy, satisfying meal that’s quick enough for weeknights but special enough for gatherings.


Ingredients

1 lb lean ground beef

8 flour or corn tortillas

2 cups enchilada sauce (store-bought or homemade)

1 cup shredded cheddar or Monterey Jack cheese

1 medium onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

Sour cream, for topping


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, cook ground beef with diced onions until beef is browned and onions are translucent, about 5–7 minutes.
  3. Add garlic, cumin, and chili powder; cook for another minute until fragrant.
  4. Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Pour enchilada sauce over tortillas, then sprinkle with shredded cheese.
  6. Bake uncovered for 20–25 minutes, until cheese is melted, bubbly, and golden.
  7. Serve hot with sour cream and desired toppings.

Notes

  • Don’t over-soak tortillas with sauce before baking—keeping most of the sauce on top helps prevent sogginess.
