Description

This Easy High-Protein Cottage Cheese Bark is a creamy, naturally sweet frozen snack that tastes like peanut butter banana cheesecake. Made with wholesome ingredients like cottage cheese, banana, and peanut butter, it’s freezer-friendly, protein-packed, and perfect for make-ahead snacking.


Ingredients

  • 1 cup full-fat cottage cheese (or low-fat)
  • 1 ripe banana
  • 2 tbsp peanut butter (or other nut/seed butter)
  • 12 tsp honey or maple syrup (to taste)
  • Toppings: mini chocolate chips or chopped dark chocolate
  • Toppings: sliced banana

  • Toppings: crushed peanuts or granola

Instructions

  1. Add cottage cheese, banana, peanut butter, and sweetener to a blender or food processor. Blend until smooth and creamy.
  2. Line a small baking tray with parchment paper.
  3. Pour the blended mixture onto the tray and spread evenly to ¼–½ inch thick.
  4. Add desired toppings such as banana slices, chocolate chips, peanut butter swirls, and granola.
  5. Freeze for at least 3 hours, or until completely solid.
  6. Remove from freezer, lift using parchment, and break into pieces.
  7. Store bark in a freezer-safe container or ziplock bag with parchment between layers.

Notes

  • Add 1–2 tbsp cacao powder for a chocolate version.
  • Swap banana for mango or pineapple and top with coconut flakes for a tropical twist.
