These easy peanut butter brownie cookies combine the chewy richness of brownies with the nutty depth of peanut butter for a fudgy, homemade treat that’s quick to prepare and deeply satisfying.
Ingredients
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or chocolate chunks
Instructions
- Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, mix peanut butter, softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the egg and vanilla, and mix until fully combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in chocolate chips or chunks evenly throughout the dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10–12 minutes, until edges are set and centers are soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake—cookies should look slightly underdone in the center when removed from the oven.
- Natural peanut butter can be used if well stirred and not too oily.
- Add chopped peanuts or swirl peanut butter on top for extra texture or decoration.
- Chilling the dough for 15–30 minutes can help with shaping and thickness if desired.
