Description

These easy peanut butter brownie cookies combine the chewy richness of brownies with the nutty depth of peanut butter for a fudgy, homemade treat that’s quick to prepare and deeply satisfying.

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chocolate chunks

Instructions

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, mix peanut butter, softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Add the egg and vanilla, and mix until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in chocolate chips or chunks evenly throughout the dough.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
  8. Bake for 10–12 minutes, until edges are set and centers are soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overbake—cookies should look slightly underdone in the center when removed from the oven.
  • Natural peanut butter can be used if well stirred and not too oily.
  • Add chopped peanuts or swirl peanut butter on top for extra texture or decoration.
  • Chilling the dough for 15–30 minutes can help with shaping and thickness if desired.
