Description

Ingredients

  • 2 large eggs
  • 1 cup sugar
  • 1/2 cup melted unsalted butter
  • 1 cup eggnog
  • 2 tablespoons rum flavor extract
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together eggs and sugar until smooth.
  3. Stir in melted butter, eggnog, rum extract, and vanilla until combined.
  4. In a separate bowl, mix flour, baking powder, salt, and nutmeg.
  5. Gradually stir dry ingredients into wet mixture until just combined—do not overmix.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
