Ingredients
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 2 cups red chile sauce (New Mexico style preferred)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 eggs (optional)
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat oil in a skillet and sauté onion and garlic until soft.
- Stir in flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in red chile sauce until smooth.
- Add cumin, paprika, salt, and pepper, then simmer for 5 minutes.
- Lightly fry tortillas until soft and drain.
- Layer tortillas, sauce, and cheese in a greased baking dish, repeating layers.
- Top with sauce and cheese, then add eggs if desired.
- Bake for 20–25 minutes until cheese melts and eggs are cooked.
- Garnish with cilantro and serve warm.
