Description

This festive antipasto cream cheese log is a colorful and flavorful appetizer, perfect for holidays or entertaining. Creamy, herbed cheese is wrapped in a mix of bold toppings like olives, sun-dried tomatoes, and cranberries, creating a beautiful and delicious centerpiece.

Ingredients

  • 16 oz cream cheese (2 blocks), softened
  • 2 tablespoons fresh mixed herbs (parsley, chives, dill), finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Toppings:
  • 1/2 cup mixed olives, finely chopped
  • 1/4 cup roasted red peppers, finely chopped
  • 1/4 cup sun-dried tomatoes, drained and finely chopped
  • 2 tablespoons capers, chopped (optional)
  • 1/4 cup marinated artichoke hearts, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons dried cranberries

Instructions

  1. In a bowl, mix softened cream cheese with herbs, garlic powder, salt, and pepper until smooth.
  2. Transfer mixture to plastic wrap, shape into a 6–7 inch log, and wrap tightly. Chill until firm, about 2 hours.
  3. In a small bowl, combine all topping ingredients.
  4. Once the cheese log is firm, unwrap and roll it in the topping mixture, pressing gently to adhere.
  5. Rewrap and chill for another 15–20 minutes before serving.
  6. Garnish with extra parsley and cranberries before serving.

Notes

  • Substitute dried cranberries with dried cherries or raisins.
  • Use part Greek yogurt for a lighter version.
  • Add chopped nuts like pistachios or walnuts for texture.
  • Let sit at room temperature for 10–15 minutes before serving for easy spreading.
