This festive antipasto cream cheese log is a colorful and flavorful appetizer, perfect for holidays or entertaining. Creamy, herbed cheese is wrapped in a mix of bold toppings like olives, sun-dried tomatoes, and cranberries, creating a beautiful and delicious centerpiece.
Ingredients
- 16 oz cream cheese (2 blocks), softened
- 2 tablespoons fresh mixed herbs (parsley, chives, dill), finely chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- Toppings:
- 1/2 cup mixed olives, finely chopped
- 1/4 cup roasted red peppers, finely chopped
- 1/4 cup sun-dried tomatoes, drained and finely chopped
- 2 tablespoons capers, chopped (optional)
- 1/4 cup marinated artichoke hearts, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 2 tablespoons dried cranberries
Instructions
- In a bowl, mix softened cream cheese with herbs, garlic powder, salt, and pepper until smooth.
- Transfer mixture to plastic wrap, shape into a 6–7 inch log, and wrap tightly. Chill until firm, about 2 hours.
- In a small bowl, combine all topping ingredients.
- Once the cheese log is firm, unwrap and roll it in the topping mixture, pressing gently to adhere.
- Rewrap and chill for another 15–20 minutes before serving.
- Garnish with extra parsley and cranberries before serving.
