Ingredients
- 8 oz cream cheese, softened
- 1 oz (3 tbsp) taco seasoning
- 1 cup mild chunky salsa
- 1 can (15 oz) black beans, drained and rinsed
- 3 cups cooked rotisserie chicken, shredded or cubed
- 2 cups Monterey Jack cheese, shredded (divided)
- 1 bag (28 oz) frozen tater tots (use about 3/4 of the bag)
- Optional toppings: sliced green onions, sour cream, extra salsa
Instructions
- Preheat oven to 400°F and set aside a 12-inch oven-safe skillet or use a 9×13-inch baking dish.
- In a large bowl, mix softened cream cheese with taco seasoning until smooth.
- Stir in the salsa until fully combined.
- Fold in black beans, shredded chicken, and 1 cup of cheese until evenly coated.
- Spread the mixture into the skillet or baking dish and sprinkle remaining 1 cup of cheese on top.
- Arrange frozen tater tots in a single layer over the top.
- Bake for 25–30 minutes, until the tots are golden and crispy. Broil for 2–3 minutes for extra crunch, if desired.
- Remove from oven and serve warm with your favorite toppings.
Notes
- Use a baking dish if you don’t have an oven-safe skillet.
- Substitute chicken with cooked ground beef or double the beans for a vegetarian version.
- Add corn, jalapeños, or extra cheese for variations.
- For make-ahead prep, assemble without tots and add them just before baking.
- Wrap and freeze individual portions for easy reheating.
