Description

This Fiesta Chicken Tater Tot Casserole is a cheesy, zesty, and comforting dinner featuring shredded chicken, black beans, salsa, melted cheese, and golden tater tots. It’s quick, crowd-pleasing, and perfect for busy weeknights or make-ahead meals.


Ingredients

  • 8 oz cream cheese, softened
  • 1 oz (3 tbsp) taco seasoning
  • 1 cup mild chunky salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 3 cups cooked rotisserie chicken, shredded or cubed
  • 2 cups Monterey Jack cheese, shredded (divided)
  • 1 bag (28 oz) frozen tater tots (use about 3/4 of the bag)
  • Optional toppings: sliced green onions, sour cream, extra salsa

Instructions

  1. Preheat oven to 400°F and set aside a 12-inch oven-safe skillet or use a 9×13-inch baking dish.
  2. In a large bowl, mix softened cream cheese with taco seasoning until smooth.
  3. Stir in the salsa until fully combined.
  4. Fold in black beans, shredded chicken, and 1 cup of cheese until evenly coated.
  5. Spread the mixture into the skillet or baking dish and sprinkle remaining 1 cup of cheese on top.
  6. Arrange frozen tater tots in a single layer over the top.
  7. Bake for 25–30 minutes, until the tots are golden and crispy. Broil for 2–3 minutes for extra crunch, if desired.
  8. Remove from oven and serve warm with your favorite toppings.
