Description
Fiesta Lime Chicken with Avocado Salsa is a fresh, zesty, and colorful dish featuring lime-marinated grilled chicken topped with a chunky avocado salsa. It’s perfect for weeknight dinners or casual gatherings.
Ingredients
- 1 pound chicken breasts, pounded to an even thickness
- For the Fiesta Lime Rub:
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- For the Avocado Salsa:
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 1 small tomato, seeded and diced
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro, chopped
- Salt to taste
Instructions
- In a bowl, mix all fiesta lime rub ingredients. Coat chicken breasts thoroughly and let marinate for at least 20 minutes.
- Heat a grill pan or skillet over medium-high heat and lightly oil it. Cook chicken for 5–7 minutes per side, until fully cooked and slightly charred.
- While the chicken cooks, combine avocado salsa ingredients in a bowl. Mix gently to keep avocado chunks intact.
- Serve the grilled chicken hot, topped with avocado salsa.
Notes
- Let the chicken marinate longer for deeper flavor.
- Prepare salsa just before serving to keep avocados fresh.
- Use chicken thighs for a juicier alternative.
