Ingredients
- Crust:
- 2 cups graham cracker crumbs

- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup cinnamon-flavored syrup (non-alcoholic)
- 2 tablespoons all-purpose flour
- Optional topping:
- 1/2 cup whipped cream
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 160°C (325°F) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and cinnamon, then stir in melted butter.
- Press mixture into the bottom of the pan and bake for 8–10 minutes. Let cool.
- Beat cream cheese until smooth, then add sugar and mix well.
- Add eggs one at a time, mixing on low speed.
- Stir in sour cream, vanilla, and cinnamon syrup until smooth.
- Add flour and mix gently until combined.
- Pour filling over crust and smooth the top.
- Place pan in a water bath and bake for 55–65 minutes until edges are set and center slightly jiggles.
- Turn off oven and let cheesecake rest inside for 1 hour with door slightly open.
- Cool completely, then refrigerate for at least 4 hours or overnight.
- Top with whipped cream and cinnamon before serving if desired.
