Description

Ingredients

  • Crust:
  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • Filling:
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup cinnamon-flavored syrup (non-alcoholic)
  • 2 tablespoons all-purpose flour
  • Optional topping:
  • 1/2 cup whipped cream
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 160°C (325°F) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and cinnamon, then stir in melted butter.
  3. Press mixture into the bottom of the pan and bake for 8–10 minutes. Let cool.
  4. Beat cream cheese until smooth, then add sugar and mix well.
  5. Add eggs one at a time, mixing on low speed.
  6. Stir in sour cream, vanilla, and cinnamon syrup until smooth.
  7. Add flour and mix gently until combined.
  8. Pour filling over crust and smooth the top.
  9. Place pan in a water bath and bake for 55–65 minutes until edges are set and center slightly jiggles.
  10. Turn off oven and let cheesecake rest inside for 1 hour with door slightly open.
  11. Cool completely, then refrigerate for at least 4 hours or overnight.
  12. Top with whipped cream and cinnamon before serving if desired.
