Ingredients
- 1 ripe avocado, peeled and pitted

Instructions
- Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
- Add the lime juice, water, cilantro leaves, garlic clove, salt, and black pepper.
- Blend on high speed until the mixture becomes smooth and creamy.
- Pause the blender if needed and scrape down the sides to ensure everything blends evenly.
- Check the consistency of the dressing and add water one tablespoon at a time if it is too thick.
- Blend again until the dressing reaches the desired smooth texture.
- Taste the dressing and adjust seasoning with additional salt or lime juice if needed.
- Serve immediately over salads, grain bowls, tacos, roasted vegetables, or use as a dip.

- Use a fully ripe avocado for the smoothest and creamiest dressing.
