Ingredients

  • 1 ripe avocado, peeled and pitted
  • 1/4 cup fresh lime juice
  • 1/4 cup water, plus extra if needed
  • 1/4 cup fresh cilantro leaves
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
  2. Add the lime juice, water, cilantro leaves, garlic clove, salt, and black pepper.
  3. Blend on high speed until the mixture becomes smooth and creamy.
  4. Pause the blender if needed and scrape down the sides to ensure everything blends evenly.
  5. Check the consistency of the dressing and add water one tablespoon at a time if it is too thick.
  6. Blend again until the dressing reaches the desired smooth texture.
  7. Taste the dressing and adjust seasoning with additional salt or lime juice if needed.
  8. Serve immediately over salads, grain bowls, tacos, roasted vegetables, or use as a dip.
